  • 1 chipotle pepper in adobo sauce, chopped
  • 1/2 cup Cacique® Crema Mexicana
  • 2 tablespoons adobo sauce
  • 1 cup cooked chicken, shredded, divided
  • 1 cup ready-made Mexican rice, divided
  • 1 cup Cacique® Dos Quesos Blend, divided
  • 2 large flour tortillas
  1. In a bowl, mix to combine crema, chipotle pepper, and adobo sauce. Set aside.
  2. Heat a comal or large pan over medium heat.
  3. Place flour tortilla in the center of comal.
  4. Spoon in ½ cup chicken, ½ cup rice and ½ cup Dos Quesos Blend; distributing ingredients evenly on tortilla.
  5. Fold tortilla over and cook until tortilla is golden brown and crisp and cheese has melted.
  6. Repeat with remaining ingredients.
  7. To serve, transfer quesadillas to a cutting board, cut in half, top with chipotle crema and serve.
