  • 2 tablespoons Cacique® Cotija, crumbled
  • 2 flour tortillas
  • 1 cup Cacique® Manchego, shredded
  • 1/4 cup sliced dates, pits removed
  • 1/2 cup arugula
  • 8 slices prosciutto
  1. Heat comal or large pan over a medium flame.
  2. Sprinkle 1 tablespoon of Cotija around the center of hot comal. (about the same size of flour tortilla).
  3. Place tortilla in middle of pan over Cotija.
  4. Sprinkle ½ cup Manchego cheese on half of tortilla.
  5. Layer half of date slices on Manchego cheese. Then sprinkle with ¼ cup arugula and 4 slices prosciutto.
  6. Fold opposite side of tortilla over to cover.
  7. Cook on each side until tortilla on the outside is golden brown.
  8. Remove from heat and cut into quarters.
  9. Make additional quesadilla with remaining ingredients
