  • 1 cup white corn kernels
  • 1 cup mango, finely chopped
  • 1/3 cup red onion, finely chopped
  • ½ cup tomato, chopped
  • 1 ½ tablespoon lime juice
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 4 large (burrito size) flour tortillas
  • 4 tablespoon Cacique® Cotija Cheese, divided
  • 2 cups Cacique® Four Quesos Blend Shredded Cheese, divided
  1. Combine corn, mango, onion, tomato and lime juice in a medium bowl.  Season with salt and pepper.
  2. Stir until ingredients have mixed well.
  3. Heat comal or large pan over medium flame.  Sprinkle 1 tablespoon of Cotija around the center of hot comal (about the same size as the flour tortilla).
  4. Place tortilla in the middle of pan over Cotija.
  5. Sprinkle ¼ cup Cacique® Four Quesos Blend Shreds on tortilla.  Top with ¼ cup salad then top salad with ¼ cup more of the Four Quesos Blend.  Fold tortilla over and cook on each side until cheese melts and tortilla is golden brown.
  6. Repeat with remaining ingredients.  Serve.
